How to add or edit existing fields on checkout form?

Hi

How to add or edit existing fields on checkout form?
I want delete country field and adding new field.
I found this article http://www.drupalcommerce.org/node/356 but there is nothing writing about my problem.

I would also be interested in removing the country field. The best I could do was Admin > Store > Customer profiles > Profile types > Manage fields and limit the country choices to 1. Would be nice just to remove that field from the address form.
