Commerce in Catalog mode only like VirtueMart
I'm planning to build a site with products but they won't have prices (at least at the begging) and they don't need SKU's.
So can I use Commerce like VirtueMart in Catalog mode only with no SKU and Price field (or at least not mandatory).

Use the Display Node to view Products
I would probably set a field in the display node called catalog view with a yes or no option and set up pages/views with conditions to display various fields based on that choice..
