Depends what email you want to edit. I'm not using Kickstart so here are emails that you can edit:

for welcome emails, reset password, cancellation emails, etc: Configuration > People > Account Settings

for order notification email: store > configuration > checkout settings > checkout rules > Send an order notification e-mail
