I would like to know how to refund a completed order (meaning the person has paid cash or via paypal and got his items from the store). Also I am using the stock management, therefore the sold item should go back to the inventory (or stock) available to be sell.

Just pinged some of the developers in Paris (September 2012) and we now have a sandbox for this!! http://drupal.org/sandbox/goldorak/1778134
The "american term" for this is "return merchandise authorization" and we should have a solution available shortly.
