How do you remove countries from checkout

I need to remove some of the counties listed on the checkout page to reflect those our shop will ship to.

I am not sure what controls this. Can someone point me in the right direction. Thanks.

I believe you navigate to:

Admin > Store > Commerce Profiles > Profile Types > Manage Fields > [Address Field] > Edit

and select the countries there.
